How to…
Getting started is simple. Remove the cheesecloth and set aside for later use. Add a high proof spirit of your choice to the spice mix in the mason jar, close the lid tight, and shake well. Store in a dark place and shake daily for 3-4 weeks. To strain, remove the lid, place the cheesecloth over the mouth of the jar, tighten the ring over the cheesecloth, and pour into a liquid measuring cup. Add 1oz of sweetener (like agave or simple syrup) and mix to combine. Pour into the included dropper bottles and enjoy!
How do I know when it’s done?
Every few days I like to open up the jar and give the mixture a smell. Don’t put your nose over or into the jar. Hold the jar a short distance from your nose and using your other hand, wave the smell towards you. It should smell very strongly of orange. Next I taste it. I add 3 drops of the liquid to a shot glass and pour in a small amount of water. The bitters should come through the water by giving it a slight orange and bitter taste. Hight proof spirits will be ready faster than lower proof spirits.
What spirit should I use?
I use 190 proof Everclear as it doesn’t add any flavor, but is very high proof. If you can’t get your hands on a bottle, a good vodka or other neutral spirit will do - as a high a proof as you can find. If you are feeling adventurous, use a whiskey or tequila. I love Old Grand Dad 114.
Spirits with under 100 Proof: fill the jar to the top of the label. Spirits 100 proof or above, fill the jar 3/4 full. Once it is ready (3-4 weeks), add water to the top of the label, shake well, then strain. The ideal proof for bitters is between 75 proof and 100 proof, so you’ll want to water down high proof spirits slightly.

Make this infusion your own by adding fresh orange peel, other citrus peel, pieces of good dark chocolate, cherries, etc. There are so many ways to customize your kit. Have fun and share your work!
